x Garlic cloves.
3
x Tablespoons of Olive Oil.
1
x Tablespoon of chopped Dill.
1
x Tablespoon of Thyme leaves.
Ground
Black Pepper & Salt to suit.
Cooking
Method:
To
prepare the Bass preheat the oven to 200C/400F/Gas 6.
Clean
the Bass and de-scale it, then cut off all remaining fins and remove the head
from behind the gill plates.
Next,
cut 5 slashes into the skin of the Bass each side and then rub one tablespoon
of olive oil along with all of the chopped dill, salt and black pepper and half
of the thyme leaves, onto the fish.
Leave
the Bass for 10 minutes to let the flavours marinate.
To
prepare the potatoes and tomatoes, pour two tablespoons of olive oil into a
large heavy-bottomed ovenproof pan.
Peel
and slice the potatoes and put them in layers into the pan.
Next,
slice the tomatoes, place them on top of the sliced potatoes and sprinkle with
chopped Garlic and the remainder of the thyme.
Once
the fish has had time to soak up the oil and herbs place it on top of the
layered vegetables.
Place
the pan into the oven and bake for 25-30 minutes.
You
will know when the dish is ready because the fish will be cooked thoroughly and
the potatoes will be soft.

serve, take out the fish, remove the bones and divide the fish into two pieces
and layer each section onto the vegetables on two serving plates.
